Avocados are a fantastic source of vitamin E, which studies have shown can be beneficial in improving the lining of the uterus.
Avocados are also great sources of magnesium, vitamin B-6, and vitamin B-3, which are good for hormonal balance; and folate, which is good for egg quality.
Avocado Grilled Cheese with Buffalo Sauce
This easy lunch recipe is quick and oh-so-satisfying. Be sure to use a gluten-free bread for this, and it will also be super nutritious. There are usually plenty of gluten-free bread options at the store – have fun picking one out that offers you the most nutrition (we’re talking about nuts and seeds, interesting herbs or spices, and a gluten-free flour with a good amount of protein).
Prep time: 5 minutes Cook time: 5 minutes Makes: one serving
- Prep the sandwich. Spread olive oil on both slices of bread on one side. Then, on the opposite side of one piece, add mashed avocado. Place that piece oil-side down in a nonstick skillet. Add the cheese on top of the avocado spread, then the last piece of bread oil side up.
- Cook the sandwich. Do this until the cheese is melted, approximately 2 minutes per side.
- Make the sauce. Whisk all sauce ingredients together until mixture is smooth.
- Serve. Pair the grilled cheese with the buffalo sauce, and enjoy!
