Fertility-Friendly Hummus Three Ways Recipe

We all get them: those cravings for toast topped with something yummy.

At Fertility Help Hub, we know it can be hard to resist the temptation when you’re TTC or having fertility treatment and trying to follow a fertility-friendly diet. Our good friend Charlotte Grand from the Fertility Kitchen (view her website here) has perfect recipes for flavoured hummus that are easy, healthy, vegan and safe for a fertility diet. And utterly delicious on toast!

Last month, Charlotte published the world’s first fertility cookbook, bursting with simple recipes packed full of flavour. This recipe is extracted from The Fertility Kitchen: The Essential Guide to Supporting your Fertility by Charlotte Grand (Quercus Books @QuercusBooks).

Roasted Beetroot and Rosemary Hummus

makes 310g (1 cup)

Ingredients

  • 5 medium beetroots, quartered
  • 1 large garlic clove
  • 1 tbsp olive oil, plus extra for drizzling
  • ½ tsp sea salt
  • 1 rosemary sprig, leaves stripped and chopped
  • 3 tbsp light (hulled) tahini
  • ½ tsp ground cumin
  • ¼ tsp mild chilli powder (optional)
  • Juice of ½ lemon
  • 1–2 tbsp filtered water

Method

  1. Preheat the oven to 180°C (350°F). Line a small baking tray with plastic-free baking parchment.
  2. Place the beetroot and garlic on the prepared tray and drizzle with the oil.
  3. Sprinkle with the salt and rosemary and roast for 45–60 minutes, or until tender.
  4. Set aside to cool, then transfer to a food processor. Add the tahini, cumin, chilli powder (if using), lemon juice and 1 tablespoon of water. Process until smooth, adding an extra tablespoon of water to thin if desired.
  5. Drizzle with extra oil to serve.

Pea and Mint Hummus

makes 430g (2 cups)

Ingredients

  • 1 x 350g jar chickpeas, drained and rinsed
  • 125g (1 cup) frozen peas, thawed slightly
  • 1 tbsp light (hulled) tahini
  • 1 small garlic clove, crushed
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil, plus extra for drizzling
  • 1 tbsp chopped mint leaves, plus extra to serve
  • Sea salt and cracked black pepper
  • 1 tbsp filtered water

Method

  1. Place the chickpeas, peas, tahini, garlic, lemon juice, oil, mint, salt and black pepper in a food processor and process until smooth. Add the water to thin, if desired.
  2. Drizzle with extra oil and sprinkle with chopped mint to serve.

Roasted Carrot and Tumeric Hummus

makes 300g (1 cup)

Ingredients

  • 6 large carrots, peeled and cut into chunks
  • 1 large garlic clove
  • ½ tsp sea salt
  • 2 tbsp olive oil, plus extra for drizzling
  • 3 tbsp light (hulled) tahini
  • ½ tsp mild curry powder
  • ½ tsp turmeric
  • Juice of ½ lemon
  • 1–2 tbsp filtered water
  • ½ tsp each of black and white sesame seeds, for sprinkling

Method

  1. Preheat the oven to 180°C (350°F). Line a small baking tray with plastic-free baking parchment. Place the carrots and garlic on the prepared tray.
  2. Sprinkle with the salt and drizzle with 1 tablespoon of the oil.
  3. Roast for 35–40 minutes, or until tender. Set aside to cool, then transfer to a food processor.
  4. Add the remaining oil, tahini, curry powder, turmeric, lemon juice and 1 tablespoon of water. Process until smooth, adding anextra tablespoon of water to thin if desired.
  5. Drizzle with extra oil and sprinkle with the sesame seeds to serve.
